Many compounds have been extracted from A. officinalis, including starch (25–35%), pectins (11%), saccharose (10%), mucilage (5%), flavonoids, caffeic acid, p-coumaric acid, isoquercitrin, coumarins, phytosterols, tannins, etc., as well as many amino acids (Gudej, 1991; Bradley(ed.), 1992).
